Washed Lettuce - Bibb or Head 1 or 2 heads depending on size
Diced Red & Green Peppers 4 oz
Fresh Ginger 1tsp
Scallions 1 tsp
Charred Red Tomatoes 4-6 each
Olive Oil As needed
Hoisin Sauce 3 oz
Salt & Pepper As Needed
Method
Remove the layers of the lettuce and shock in cold water; you may have to add a few ice cubes to bring the water temperature down. You do not want to leave the lettuce in the cold water for longer than 20 minutes. Make sure to remove and pat dry then set aside.
In a hot sauté pan, add olive oil and wait until the oil becomes hot. Add ginger, diced red and green pepper and stir to keep from burning.
Once the peppers have softened, add ground chicken. Continue to stir to break up large chunks of ground chicken and to keep from burning.
Season the meat with salt and pepper and add Hoisin sauce. Continue to stir until sauce coats the mixture.
Add charred tomatoes and scallions; place mixture into a cold lettuce leaf and roll it up.
You may put a few lettuce leafs on a plate next to a large portion of cooked chicken and have your guests serve themselves.
